OUR winter harvest salad is the perfect sweet and savory combination!
Ingredients
Winter Harvest Salad
- 1 container chopped butternut squash
- Avocado oil spray, salt, pepper
- 1 container of Revol Greens® Organic Romaine Twins
- 1 cup cooked wild rice
- 1 large Honeycrisp apple, chopped
- 1/2 cup dried cranberries
- 1/2 cup pepitas
- 1/2 cup pomegranate seeds
Dressing
- 2 tablespoons olive oil
- 3 tablespoons apple cider vinegar
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon each: garlic powder, salt, pepper
Instructions
- Preheat oven to 400 F.
- Put the squash in a single layer on a baking sheet. Spray with cooking spray, salt, and pepper. Bake for 25-30 minutes until the edges are browned.
- Put the Romaine lettuce in a large bowl and add the cooked wild rice, apple, dried cranberries, pepitas, and pomegranate seeds.
- In a small bowl whisk up the dressing.
- Toss everything together!
Prep time: 10 minutes
Cook time: 25 minutes
