OUR winter harvest salad is the perfect sweet and savory combination!


Ingredients

Winter Harvest Salad

  • 1 container chopped butternut squash
  • Avocado oil spray, salt, pepper
  • 1 container of Revol Greens® Organic Romaine Twins
  • 1 cup cooked wild rice
  • 1 large Honeycrisp apple, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup pepitas
  • 1/2 cup pomegranate seeds

Dressing

  • 2 tablespoons olive oil
  • 3 tablespoons apple cider vinegar
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon each: garlic powder, salt, pepper

Instructions

  1. Preheat oven to 400 F.
  2. Put the squash in a single layer on a baking sheet. Spray with cooking spray, salt, and pepper. Bake for 25-30 minutes until the edges are browned.
  3. Put the Romaine lettuce in a large bowl and add the cooked wild rice, apple, dried cranberries, pepitas, and pomegranate seeds.
  4. In a small bowl whisk up the dressing.
  5. Toss everything together!

Prep time: 10 minutes

Cook time: 25 minutes
