Ingredients
Buddha Bowl
- 1 ½ heads of Revol Greens® Organic Romaine Twins, chopped
- 1 bunch asparagus, tough ends discarded and chopped
- 2 cups shelled edamame
- 2 heirloom green tomatoes, chopped
- 1 green pepper, diced
- 1 cucumber, diced
- 1 cup peas
- 1 cup cooked quinoa or farro
- ¼ cup toasted pumpkin seeds
Sauce
- ½ avocado
- ½ head chopped Revol Greens® Organic Romaine Twins
- Juice of one lemon
- ½ cup parsley
- ½ cup cilantro
- 1 tablespoons tahini
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 tablespoons of water
Instructions
- Put all sauce ingredients into a blender and blend until smooth. If you want the sauce thinner, just add more water.
- Steam the asparagus for 4-5 minutes using a steamer basket or cook in a small amount of water.
- Add the chopped romaine to a large bowl or 3 smaller, shallow bowls.
- Now add the asparagus, tomatoes, green pepper, cucumber, peas, quinoa, and pumpkin seeds.
- Add the sauce to the center of the bowl and serve.
