Ingredients
- 1 red onion, sliced
- 4 cloves garlic, chopped
- 3 bell peppers, sliced
- 1 (8-ounce) carton mushrooms, sliced
- 2 tablespoons avocado oil
- 3 tablespoons soy sauce
- 3 tablespoons lime juice
- 1 tablespoon maple syrup
- 1 teaspoon each: cumin, smoked paprika
- 1/2 teaspoon pepper
- 1-2 heads of Revol Greens® Organic Romaine Twins
- 10 small flour tortillas
Instructions
- In a small bowl combine the avocado oil, soy sauce, lime juice, maple syrup, cumin, smoked paprika, and pepper.
- Pour the marinade over the veggies, stir, and refrigerate for at least ½ hour.
- Add the oil to a large skillet and bring heat to medium-high. Add the marinated veggies and cook for 15 minutes stirring frequently.
- Warm the tortillas.
- Layer romaine leaves inside of a warmed tortilla, then top with the fajita mixture.
- Garnish with avocado, tomatoes, salsa, sour cream, and more chopped romaine.
