Ingredients
Lentil Lettuce Wraps
- 2 cups cooked green or brown lentils
- 1 diced shallot bulb
- ½ cup dairy-free or regular feta cheese
- ½ cup pomegranate seeds + more for topping
- ¼ cup chopped cilantro
- 1 teaspoon lime juice
- 1 head Revol Greens® Butter Leaf Lettuce
Dressing
- 3 tablespoons olive oil
- Juice of 1 ½ limes
- 2 tablespoons pomegranate molasses
- 1 tablespoon maple syrup
- 1 teaspoon pink Himalayan salt
- 1 teaspoon sumac
- 1 teaspoon za’atar
Instructions
- In a large bowl combine the lentils, shallots, feta cheese, pomegranate seeds, cilantro, and lime juice.
- In a small bowl combine the dressing ingredients.
- Pour the dressing over the lentil mixture and toss.
- Distribute the lentil mixture into the Butter Leaf Lettuce leaves and top with more pomegranate seeds.
