Ingredients

Warm Nourish Bowls

  • 5 cups cubed sweet potatoes
  • 1 tablespoons olive oil
  • ½ teaspoon salt
  • 2 tablespoons maple syrup
  • 3 cups cooked farro
  • ⅓ cup dried cranberries
  • ⅓ chopped pecans
  • ¼ cup sliced red onion
  • 1 cup of Revol Greens® Organic Sweet Butter Blend

Dressing

  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon spicy brown mustard
  • 1 crushed garlic clove
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 400 F.
  2. Add the sweet potatoes to a large bowl and combine with olive oil, salt, and the maple syrup.
  3. Spread out on a baking sheet and bake for 20 minutes.
  4. In a small bowl, combine the dressing ingredients.
  5. Put the butter and red leaf lettuce in a large bowl.
  6. Add the roasted sweet potatoes, farro, dried cranberries, pecans, red onion, and dressing to the bowl with the butter lettuce and toss.
  7. Serve warm.

Makes 8-10 servings.
